Stir fried chicken with cashew like in Thailand
Ingredients
For the Sauce:
1 tablespoon soy sauce
1 tablespoon teriyaki sauce
1 tablespoon fish sauce
3 tablespoons water
1 tablespoon lemon juice
1 teaspoon dark brown sugar
For the Fried:
2 tablespoons canola oil
3/4 cup roasted cashew or peanuts
1 purple onion cut into half thin rings
2 crushed garlic cloves
300 g Chicken breast
2 green onion cut into
2 cm pieces
1/2 red chili pepper
Preparation
Step 1
Prepare the sautéed sauce, mix all the sauce ingredients in a bowl and keep.
Step 2
Prepare the stir fry : heat oil in a wok o pan,and sauté the cashews for few minutes, until nicely golden.transfer with slotted spoon to a plate and set aside.
Step 3
Add the broccoli, onion and garlic to the pan( or wok), Increase the flame and sauté for two minutes.
Step 4
Add the chicken and sauté for a few minutes until it changes color on all sides ( pink to white)
Step 5
Add the white part of the green onion and chill and continue to sauté
for another minute until the white part of the green onion begins to soften.
Step 6
Add the sauce, stir and sauté for another minute until all the ingredients are covered in a nice layer of glossy,sticky sauce.
Step 7
Add the green part of the green onion and cashews and sauté for another 30 second.Turn off the fire.
sprinkle with chili rings and serve the stir- fry on a bed of white rice.
